Can the University of California make campus food sustainable?
The biggest challenge will be for the fast food chains located on UC campuses. How will they offer sustainable options when their inputs come from enormous national supply chains? The article suggests they may not be able to and will therefore have to move off campus—which would be a good thing for the students…but where will the Taco Bells go? Most likely to poorer neighborhoods that lack the strong lobbying power of a big institution like the UC system. If instead of pushing them out we work with them to change we might be able to avoid this outcome? What do you think?
